Strawberry & Crème Sandwich by Karen Burns-Booth

Can't get your hands on the M&S viral Red Diamond Strawberry & Crème Sandwich? Why not make your own?

I made a FULL round today for brunch - and it was delicious! Based on he Japanese Fruit Sando, I used sweetened sliced brioche bread, with whipped cream cheese and double cream and KING SIZE fresh English strawberries. The verdict?

DELECTABLE, really lovely - light and fruity and like a cake, but not. Recipe method, such as it is, is shared below and please do let me know:

Have a wonderful Wimbledon week with lots of strawberries and cream.

Makes 1 sandwich 
2 x slices sliced brioche bread (thick slices)
4 large fresh strawberries, cut in half then sliced
2 x tablespoons cream cheese whipped with 1 x tablespoon thick double cream

Method
1. Cut the 2 slices of brioche on the diagonal.
2. Spread a little cream cheese in the bottom slice, when arrange the strawberries along the cut edge, so you can see them.
3. Spoon the rest of the cream cheese on top and ease it into the gaps between the strawberries.
4. Place the other slice on top to make a diagonal sandwich.  
5. Serve with a cuppa or a glass of pink fizz!
