Delia of @fortheloveofthetribe has kindly shared with us the cutest Bunny Shortbread recipe! Perfect for an Easter gathering, or even a table gift for your Easter lunch!
*Makes approximately 22 biscuits
150g butter at room temperature
125g icing sugar
275g plain flour
2 tbsp vanilla essence
Beat the butter and sugar in a bowl until pale and fluffy
Stir in the vanilla essence
Mix in the flour until it’s combined into a dough
Roll out the dough onto a lightly floured surface to approximately 5mm thick
Cut out the biscuits using a bunny cutter, or any cutter that you like. (You can push any left-over dough into a cookie cutter so nothing is wasted.)
Bake at 160 degrees for 10-12 minutes or until they are golden brown around the edges
Allow to cool on a wire rack
Decorate as desired
And hopefully there will be one left for you to enjoy, along with a spot of tea!
